"one recommendation from their college's recommending committee" is a complete alternative to the whole three letter package, not a supplement to it.

Two science letters, as the baseline assumes, but inside a fixed package: applicants submit "either three letters of recommendation, two written by instructors in the sciences and one written by an instructor and/or mentor in a field other than the sciences" or "one recommendation from their college's recommending committee." There is no free third slot to spend on a dentist.

1 letter

"one written by an instructor and/or mentor in a field other than the sciences." A mentor outside the sciences counts, so this need not come from a classroom instructor. The baseline does not carry this line at all.

Creighton names no dentist letter. Its letters requirement is fully specified as two science instructors plus one non science instructor or mentor, or a single committee letter, so a dentist's letter has nowhere to go in the required set. Shadowing is still required separately, 65 hours minimum, and a dentist letter remains useful at other schools on the same list.
